Finishing Sauces:
Do you use dry rub or marinade seasoning on the meat before placing it on the grill? We do! Do you use wood smoke to enhance the meat's flavor? We do! Do you use a finishing sauce on ribs, butts, briskets, ect? We do!
You probably are aware of the first two items, a seasoning rub to get the flavor going and wood chips, wood chunks or charcoal/wood to enhance the smoke flavors. But do you use a finishing sauce? A "finishing sauce" is the final act of cooking some of the larger pieces of meat on the grill or smoker. It adds one final layer of flavor to the meat and, at the same time, dresses up the meat for the presentation at the table.
But exact what is a finishing sauce? A finishing sauce is usually an exceptionally nice barbecue sauce that may be thinned to make it more spreadable. Once your meat has been cooked to perfection, and is "resting" on the grill with the lower temperatures, using a pastry brush, apply a thin layer of your sauce on all sides of the meat. Allow the meat to continue resting on the pit/grill until the sauce becomes "tacky" to the touch. Remove and serve to the Oohs and Aahs of your guests.
